The Feathered Nest in Nether Westcote has appointed James Erasmus as its new head chef. Erasmus, who has worked at renowned restaurants such as The Ledbury and The Harwood Arms, will bring a focus on seasonal, sustainable British cuisine. His menu includes locally sourced ingredients, with dishes like Bathurst Estate venison faggot and roast duck breast with fermented cabbage. Erasmus, originally from South Africa, developed a passion for sustainability on his family’s farm before training at the Institute of Culinary Arts. He expressed excitement about leading the kitchen, aligning with The Feathered Nest’s values of quality and craftsmanship.  

Stephen Fearnley FIH has been named general manager of Waterton Park Hotel and Spa in Wakefield. With extensive hospitality experience at prestigious properties like Mottram Hall and Billesley Manor, Fearnley aims to enhance guest satisfaction, team engagement, and the hotel’s local reputation while implementing sustainable practices. A Yorkshire native, he is excited to lead a team in a historic setting. Waterton Park, operated by Amaze Hotels, features 63 rooms across its Georgian mansion, Walton Hall, and a modern extension, along with a golf course and The Grand Café dining room.  

Brightstar Hospitality has appointed Sylvain Lagier as group operations director in a newly created leadership role. Lagier, who has experience with major brands like Disney, IHG, Hilton, and Accor, will oversee operations across Brightstar’s growing hotel portfolio. CEO Nik Gupta praised Lagier’s mix of hands-on and strategic expertise, while head of people and culture Hayley Pearce highlighted his role in driving business growth. Brightstar currently operates 23 hotels across the UK, with further expansion plans. Lagier expressed excitement about the opportunity to lead the company’s next phase.
