Apex City of London Hotel gets £1.5m makeover

In this episode we speak to Anthony Hunt, partner and co-head of Corporate Real Estate at law firm Howard Kennedy. We discuss why 2026 may be seen as a pivotal year for boutique hotels, unpack the rise of global nomadism and how this is shaping demand and trends across hospitality, and how a strong team and clear, consistent messaging and offerings are key to securing investment.

Work has now been completed on a £1.5m refurbishment programme at the 209-bed Apex City of London Hotel.
The nine month project, saw the hotel’s public areas and largest meeting room given a makeover – with a new restaurant and spa. The hotel has also partnered with PURE Spa and Beauty and includes an infra-red sauna, manicure and pedicure bars, a spray tan booth, relaxation area and luxury retail area.

Work was carried out in phases at the hotel on Seething Lane – just minutes from Tower Hill Underground and Fenchurch Street Station – to minimise the impact on staying guests.

The new restaurant, The Lampery, will provide an all-day dining destination with the design concept spearheaded by hospitality and events company, Concerto, in partnership with Apex Hotels.

Brian Tapson, general manager of Apex City of London Hotel, said: “We’re thrilled to welcome guests to our new look hotel. Following the addition of 30 bedrooms just two years ago, the refurbishment has transformed the hotel, with the inclusion of an indulgent spa and food offering that will appeal to locals as well as hotel guests.”
