Interstate Europe Hotels to manage new Northern Ireland hotel

In this episode we speak to Anthony Hunt, partner and co-head of Corporate Real Estate at law firm Howard Kennedy. We discuss why 2026 may be seen as a pivotal year for boutique hotels, unpack the rise of global nomadism and how this is shaping demand and trends across hospitality, and how a strong team and clear, consistent messaging and offerings are key to securing investment.

A new hotel and spa complex in Northern Ireland, which will begin construction imminently, has become the latest property to join Interstate Europe Hotels and Resorts’ UK portfolio.

The £20m Merrow Hotel and Spa complex in Portstewart will be run by the third-party management company, adding to its portfolio of around 70 managed hotels across the UK.

It will feature 118 rooms, a spa with sea views, a leisure club with a 20m pool, conference space, meeting rooms and nine chalets serviced by the hotel.

Nicholas Northam, managing director for the UK at Interstate Europe, said: “The Merrow Hotel and Spa development is an exciting addition to our growing UK portfolio.

“We’re confident the development will bring major benefits to the area – both to visitors in Portstewart and to the local community – we can’t wait to see work begin on the construction of the property in the near future.”
