Red Carnation opens first Scottish hotel in Edinburgh

Led by resident manager, Laura Jamieson, 100 Princes Street features 30 ensuite rooms and suites

Red Carnation Hotels has announced the opening of 100 Princes Street in Edinburgh, marking the family-owned group’s first property in Scotland

Led by resident manager, Laura Jamieson, 100 Princes Street features 30 ensuite rooms and suites; The Wallace, a dining room, bar and lounge; and the Ghillie’s Pantry, a private dining room offering over 100 whiskies and custom tasting menus. 

The hotel’s inspired design was achieved by a collaboration from the acclaimed team behind Botswana’s Xigera Safari Lodge and Ireland’s Ashford Castle, with Toni Tollman at the forefront.

100 Princes Street boasts a hand-painted mural, celebrating “the daring spirit and ingenuity of Scottish explorers”, which stretches the length of the five-story staircase and tells the story of the journeys of Scottish botanists.

The hotel’s two signature suites, named The Archibald and The Isobel, offer guests views of Edinburgh Castle, making them the city’s “most coveted” accommodations. 

The Wallace will be led by 100 Princes Streets’ chef, Willhelm Maree, who will offer “refined” afternoon teas and a menu that “pays tribute to the richness of Scotland’s local produce”.
