Internationally acclaimed artisan smokehouse, John Ross Jr, is to be joined by executive chef Paul Bates and his team for the Coronation Festival.
The four day event is a gathering of selected Royal Warrant holders at Buckingham Palace to celebrate ‘The Best of British’.
Bates has been invited by the Aberdeen smokehouse to create three unique dishes to serve up to the public that will be attending the event in the Gardens of Buckingham Palace on 11 to 14 July. These include a gourmet smoked salmon bagel, a smoked salmon salad served in a bamboo cone and a selection of smoked salmon canapés.
He will be joined by his team from InterContinental London Park Lane. He said: “John Ross Jr has consistently produced a first-class smoked salmon using traditional brick kilns and it deserves to be recognised on this global stage. “
Paul and his executive team will join John Ross Jr, who supplies world-renowned hotels and restaurants in the UK and across the globe, as guests for four days to provide smoked salmon carving master classes and demonstrate how smoked salmon can be used in a variety of dishes.
He added: ‘We’re delighted to be a part of the Coronation Festival and thrilled to be able to help showcase everything that’s good about the UK right now.”
The founder of John Ross Jr, Andrew Leigh, said: “It’s great to have Paul Bates and his team on board and we look forward to celebrating 25 years of John Ross Jr, revealing some of the secrets of our smokehouse and showcasing our products to the tens of thousands of people expected over the weekend.”
John Ross Jr is producing a limited edition Original Classic Smoked Salmon for the celebration, which uses methods from the turn of the century and a delicate blend of rum and Demerara sugar to create a unique flavour. The product will be available to the foodservice industry for a limited period only.
