Mama Shelter London Shoreditch appoints head chef and F&B director

Mama Shelter London Shoreditch has appointed James Green as its new executive head chef and Mattia Rinaldi as F&B director to help “craft a creative and compelling offering” for the hotel’s restaurant outlet and Garden Bar.

Green brings with him over 20 years of experience working in establishments such as Drake and Morgan, Gordon Ramsay Group and Mango Tree.

Overseeing a team of 10 chefs, he will be responsible for the development and execution of Mama’s upcoming menu, staff recruitment and training programs, while ensuring all dishes are “served to the highest quality”.

The new menu concept is globally inspired with nods to the hotel’s Shoreditch location, as well as Mama Shelter destinations across the world. Dishes include Fish and Chips; California Rainbow Salad and a Peri Peri Chicken Burger inspired by Mama Shelter Lisbon. The menu will rotate featured dishes inspired by other Mama locations seasonally.

Green said: “I’m very excited to join the Mama Shelter brand. Mama Shelter London Shoreditch is well situated, inviting in a community that is obsessed with good and creative food. The concept menu is reflective of the vibrant and diverse community, whilst also educating our visitors that Mama is a global brand and inviting them to experience a taste of standout locations across the world.” 

Meanwhile, Rinaldi has a “wealth” of experience acting in a number of senior management roles at Gaucho Restaurants and Ivy Collection, where he was an integral part of the opening team for Ivy Asia. 

Mama Shelter London Shoreditch appoints head chef and F&B director

He joins the Mama family as F&B director with plans to “preserve excellent levels of service”, whilst growing the team ensuring every new staff member receives “exemplary” training and development.

Rinaldi said: “Joining the Mama Group will be such an exciting challenge. I’m thrilled to be part of an incredible global brand, and representing a strong team in its only UK property. East London has such a great audience, and I can’t wait to entice them in with the new F&B offering.” 

Mama Shelter general manager, Robert Alam, added: “At Mama Shoreditch, we’re placing a key focus on our food and beverage offering to further enhance and appeal to the local community and provide delicious options to our guests. Mattia and James both bring a wealth of creative experience, and we look forward to seeing the impact the new menus bring.”

Mama Shelter London Shoreditch is described as a “dynamic and playful” hotel with a restaurant, Garden Bar, Ateliers for events and Karaoke rooms. The restaurant hosts lively get-togethers and informal celebrations, serving homemade food, signature cocktails, DJ’s, live music, foosball, brunch and cultural programming.
