Roberto Costa, the founder of Macellaio RC, is launching Matooro Academy in April 2023, a programme for aspiring chefs and front of house staff who want to break into the hospitality industry.
The six-month long programme will provide students with a broad range of skills in the culinary arts, wine and hospitality management. The academy will offer a mix of theoretical and practical classes, as well as hands-on experience at top hotels such as Brown’s Hotel, The Ritz and Meraki.
The programme has been developed in partnership with the European School of Economics in London and it is structured to motivate professionals in the hospitality sector. Students will be taught a range of modules, from how to manage the HR and finance of a restaurant, through to guest experience and menu engineering.
All participants will also be provided with accommodation and an Oyster card to travel by tube or bus around the city. In addition, the programme will offer an English course, for those who require it, which will be structured to prepare students to attend a B1 English test at the end of it. After six months, students will have the opportunity to present their own business plan and receive a certified diploma.

The academy is sponsored by the Italian Ministry of Foreign Affairs, Affairs, the Italian Chamber of Commerce and industry in the UK and FIPE, the Italian hospitality federation.
