The newly reopened Newbridge on Usk has announced the appointment of Carl Newcombe-Ling as its new head chef.
Newcombe-Ling has clocked up more than 10 years of industry experience working in London.
He has worked as senior sous chef at Searcys at the Gherkin, and as head chef at Seven Park Place, a Michelin-starred restaurant in Mayfair.
His cooking style embraces the ethos of slow cooking and traditional Swedish culinary techniques, such as smoking, fermenting and salt baking.
The Newbridge on Usk menu included dishes such as slow roasted Monmouthshire pork collar, hot smoked trout, and pickled mackerel.
Newcombe-Ling also prioritises featuring the finest local and seasonal ingredients, many of which are grown in the Newbridge on Usk inn’s very own garden.
The Newbridge on Usk hotel is operated by the Celtic Collection and reopened last month.
