The Buttery at Lime Tree Hotel appoints new head chef and sous chef

In this episode we speak to Nico Tréguer, co-founder of Roberts and Treguer and The Culpeper Family. Nico spoke about founding the group alongside his longtime friend Gareth, having had a vision for bringing more nature spaces to cities, the planned extension of The Buxton in Spitalfields, and how the site’s storytelling engages guests and the local community, how the Culpeper Family’s core sustainability ethos helped it secure its B-Corp status and why hospitality has a responsibility to educate and innovate when it comes to sustainability.

Lime Tree Hotel has recently appointed Mathilde Bouvier as head chef and Elvi Ramadani as sous chef of the hotel’s rustic-chic cafe-style restaurant, The Buttery.

With over nine years of experience in the industry, Bouvier joins from Brother Marcus in Borough Market, where she opened the new location and held the position of head chef for two years. Prior to this role, she was head chef at Rose Bakery at Dover Street Market.

Ramadani has also been scooped up from Brother Marcus where he spent over two years refining his gastronomic talents.

At The Buttery, Bouvier will be responsible for the development and execution of the breakfast, brunch and lunch menus, as well as managing the kitchen brigade on a day-to-day basis. Her culinary flair will see modern British classics reimagined in elevated and exciting ways with an Ottolenghi-style twist.

Brand new lunch menu items include Green shakshuka, Smoked Roasted Aubergine with babaganoush, feta and pomegranate served on toasted sourdough and Kimchi Fried Chicken with spicy avocado and pickled cucumber and chilli.

In addition, there are plans afoot to launch a garden-inspired Afternoon Tea and to relaunch a sharing-style menu for dinner towards the end of summer 2023.

Regarding her appointment, Bouvier said: “I am incredibly excited to be working closely with such a lovely team and am eager to develop the already fabulous menus and gastronomic offering at The Buttery.”

The Buttery is open to both hotel guests and the public seven days a week. Reminiscent of a country cottage and a whole world away from the heady bustle of nearby Sloane Square, through to the back is a secret garden dotted with parasols, comfy garden sofas and tables for dining.

The 26-bedroom Lime Tree Hotel, which has been in the Goodsall family for over a decade, underwent a complete refurbishment during lockdown and reopened to huge success having since been included in The Sunday Times Best Places to Stay for two years in a row.

Matthew and Charlotte Goodsall, owners of Lime Tree Hotel, said: “We’re absolutely thrilled to welcome Mathilde and Elvi to the team and look forward to a new chapter ahead under Mathilde, a passionate and very talented chef with exciting plans for The Buttery.”
