Red Carnation Hotels has officially opened a new rooftop bar at The Chesterfield Mayfair, marking the latest addition to the family-run group’s London portfolio.

Stanley’s, which takes its name from the late founder Stanley Tollman, offers seating for up to 60 guests and features a fully retractable roof. The bar serves cocktails and seasonal small plates alongside views across Mayfair.

The opening coincides with the group’s wider programme of refurbishments and new developments, including the recent launch of 100 Princes Street in Edinburgh.

The cocktail list includes spritzes, gin and tonics and house specials such as Stanley’s Martini and Thymes in Paris, alongside sharing dishes including grilled chicken satay, lobster rolls and cheddar toasties made with locally sourced ingredients.

Vicki Tollman, president of Red Carnation Hotels, said: “The red carnation was my father’s signature flower – a simple yet powerful symbol of warmth, generosity and genuine care. Stanley’s is a tribute to that spirit – a place where every guest feels personally looked after and truly at home.”

The design features burnt-cedar decking, a marble bar and a mosaic portrait of Stanley Tollman created by Maggy Howarth Studio, known for its handcrafted stone mosaics. A cubist-style walkway designed in the group’s in-house style leads to the rooftop terrace.

Adam Lake, general manager of The Chesterfield Mayfair, added: “Stanley’s is more than just a rooftop bar – it’s a statement of who we are today and where we’re going. It’s intimate, elegant, and unlike anything else in Mayfair.”
