Hotel Cafe Royal to open new restaurant run by chef Laurent Tourondel

In this episode we speak to Anthony Hunt, partner and co-head of Corporate Real Estate at law firm Howard Kennedy. We discuss why 2026 may be seen as a pivotal year for boutique hotels, unpack the rise of global nomadism and how this is shaping demand and trends across hospitality, and how a strong team and clear, consistent messaging and offerings are key to securing investment.

Hotel Café Royal is set to open a new restaurant in collaboration with French chef Laurent Tourondel.

Tourondel will be joined by general manager Dinos Tagkalos, who previously launched Ollie Dabbous’ Henrietta Hotel restaurant and bar in Covent Garden.

The wine programme will be overseen by head sommelier Sam Heathcote, who moved from the Bulgari Hotel and has previously worked at Alain Ducasse’s three-Michelin-starred restaurant at the Dorchester hotel. Fabio Spinetti, from The Connaught, will be the new bars and beverage manager.

The 110-cover restaurant has been designed by the Italian architect and designer Piero Lissoni, and will be located on the first floor of the hotel’s building. The as yet unnamed restaurant at the luxury hotel will launch in May.

Guillaume Marly, Hotel Café Royal’s managing director, said: “At Hotel Café Royal, we pride ourselves on bringing world class chefs and cuisine to all our guests. I am delighted to welcome Laurent to our hotel.”
