Hilton Garden Inn Dublin, a contemporary 324-room hotel, has announced the opening of its Irish-American dining destination, Honey Fitz, following a €1.5m (£1.26m) investment.
Named after John Francis “Honey Fitz” Fitzgerald, Boston’s first Irish American mayor and the grandfather of former U.S. president John F. Kennedy, the restaurant and cafe celebrates “the deep cultural connections between Ireland and the United States”.
The €1.5m (£1.26m) investment comes from private real estate investment fund manager Henderson Park and its in-house hospitality operator and asset manager, Klarent Hospitality.
The interior and architectural design of the 160-cover restaurant, crafted by Cunningham McLean/Klarent Hospitality, features an art deco aesthetic. The space is made up of several distinct areas, including a refined bar, the restaurant itself, coffee shop Roasted Notes, and the Winter Garden.
Honey Fitz has partnered with KSG, a specialist restaurant and food services company to create a locally sourced menu which blends Irish and American flavours.
Signature dishes include the Braised Irish Beef Feather-Blade with mustard creamed potatoes and red wine jus, and Boston-inspired classics such as Clam Chowder, made with smoked haddock and bacon.
Some 80% of the food is sourced in Ireland and includes seasonal Irish produce, which is delivered daily.
