Mollie’s to open fourth UK site at Edinburgh Park

Mollie’s, the hybrid motel and diner brand, has agreed terms for a new site at Edinburgh Park in partnership with developers Parabola.

The planned hotel and diner, subject to planning permission and licensing, would be the company’s first location in Scotland and is scheduled to open in 2028. The site is close to Edinburgh Park station, with access to the M8, city bypass, tram and bus services.

The 73,000 sq ft development is expected to include about 200 rooms, a diner with outdoor terrace, meeting and event spaces, and parking with electric vehicle charging points. 

Mollie’s said the design would align with the surrounding architecture and complement Parabola’s wider development of the area.

Edinburgh Park is being developed into a mixed-use district under the City Plan 2030, which aims to transform the area into a high-density, sustainable extension of the city. 

According to Mollie’s and Parabola, the hotel would add to the vibrancy of the area, which also includes the planned AEG entertainment arena.

Founded in 2019, Mollie’s is a certified B-Corp inspired by American motels and diners. The brand operates hotels in Bristol and Oxfordshire, with a Manchester location due to open later this year.
