Mallory Court Hotel and Spa in Leamington has appointed Keiron Stevens as its new executive head chef.

Stevens joins Mallory Court Hotel and Spa after almost two years as head chef at Whatley Manor Hotel and Spa in Cotswolds, and previously worked as head chef at Adams in Birmingham where he maintained its Michelin star.

He takes on the role following the retirement of “well-respected” chef Simon Haigh after more than 21 years with the Eden Hotel Collection.

Past positions have also seen him work as chef de partie at three-Michelin starred Benu in San Francisco, and executive chef at Cheltenham-based JM Socials where he oversaw five restaurants.

He spent his earlier career at Pennyhill Park in Surrey and Gidleigh Park in Devon under the guidance of Michael Wignall, and began his career in hospitality at Le Champignon Sauvage at the age of 15 in his hometown of Cheltenham.

In his new role, Stevens will develop the culinary offering at the hotel’s flagship 3 AA Rosette restaurant The Dining Room and what is currently the Orchard House Café, alongside overseeing catering for private dining, room service, weddings, and events.

Stevens will also work on plans to revamp the menus with new dishes and flavours which focus on the “best” seasonal and local produce, utilising the hotel’s own kitchen gardens.

Mallory Court Country House Hotel and Spa is a Lutyens-style manor house hotel set within 10 acres of grounds and is owned by The Eden Hotel Collection.

As well as The Dining Room, it offers 42 bedrooms, an events suite, private dining spaces, extensive gardens and the Elan Spa.

He said: “Mallory Court has an incredible reputation and when the opportunity arose to take up the mantle from Simon, it was something I couldn’t pass up.

“My main focus is good food that makes people happy, creating super tasty dishes that are well executed using quality seasonal produce. I’m really looking forward to putting my stamp on The Dining Room, building on its strong reputation and elevating it as the place to be in Leamington for great food in a relaxed setting.”

Josefine Blomqvist, general manager of Mallory Court Hotel and Spa, added: “Keiron has an impressive background and has brought tremendous enthusiasm to the role since joining.

“His arrival is part of a new era for The Dining Room and follows the appointment of our restaurant manager Bruno Asselin. We are thrilled to have him on board and are excited for what is to come under his stewardship.”
