Chef Stu Deeley has officially opened a new modern British restaurant at Mallory Court Country House Hotel and Spa in Leamington Spa.

The Warwick, located within the Eden Hotel Collection property, marks a return for the chef, who previously worked at Mallory Court early in his career. 

Deeley described the opening as a “deeply personal milestone” and his “most ambitious project to date”.

The restaurant, which is open for dinner from Wednesday to Sunday and for lunch on Sundays, offers a seasonal menu influenced by produce from the hotel’s kitchen gardens, with dishes that blend classical technique and contemporary British cooking. 

Guests can choose from a five-course tasting menu or a three-course menu.

Sample dishes include Cornish crab with Isle of Wight tomatoes, poussin with Jamón sauce, and a gazpacho of peas and mint served with burrata and globe artichoke. Desserts include a baked Alaska inspired by childhood flavours.

Deeley rose to prominence after winning MasterChef: The Professionals in 2019 and later led the kitchen at Smoke at Hampton Manor.
