Jersey luxury hotel, The Club Hotel and Spa, has announced the appointment of Tom Earnshaw to head chef of Bohemia, the island’s only Michelin-starred restaurant, effective on 8 June.
Earnshaw has previously worked at four Michelin-starred restaurants including the three-star Moor Hall Restaurant (then two-star) as well as Northcote and The Samling hotels, before joining Bohemia as sous chef in 2023.
He will replace Callum Graham, who is leaving Jersey after nine years at Bohemia for a new role in the UK. Graham spent five of those as the restaurant’s head chef.
In his new role, Earnshaw will oversee Bohemia’s kitchen and lead the development of the restaurant’s signature tasting and á la carte menus, which celebrate seasonal produce from Jersey and France.
He will also continue to champion strong relationships with the island’s top producers, farmers and fishermen, as well as trusted French suppliers just 14 miles across the water.
