Wignall will depart after the New Year, as he is leaving to start a new venture of his own.
The announcement comes two years after the chef joined Gidleigh Park in January 2016 and follows a successful partnership, with Wignall being awarded many accolades including two Michelin stars just nine months after starting at the hotel.
The chef joined from the the Latymer at Pennyhill Park in Surrey, where he also held two Michelin stars.

Michael Wignall added: “It’s been a pleasure to live and work in Devon, and I am so proud of what I’ve achieved, together with my amazing team at Gidleigh Park. I’m now looking forward to my next venture which I will be announcing in the very near future”.
