Dimitri Liske has been appointed as head chef for the on-site restaurant, Rycrofte’s. The wider leadership team includes cluster director of sales and marketing Edward Field and cluster director of revenue Ramona Bocca.

Other appointments include food and beverage manager Aiden Page, front of house manager Alessia Cerbini, cluster HR manager Martina Cirillo, and operations manager Teresa Vitiello.

In addition, Muzafar Iqbal joins as cluster financial controller and Jon Crawley has been named chief engineer. The hotel features include a “Treasury Wall” and a monthly market for local artists.

Located near the Tower of London and St Paul’s Cathedral, the hotel will be themed around the heritage of the City of London

Hunter said: “The opening of The Derby London City marks an exciting new chapter for us, and I’m incredibly proud of the exceptional team we’ve brought together. Each member of our team will play a key role in bringing our hotel, bar and restaurant to life, and we can’t wait to welcome our first guests to this historic part of London.”
