The Savoy has appointed Nicolas Schell as director of food and beverage to oversee its restaurant, bar, and banqueting operations.
Schell will be responsible for all-day dining at Gallery, the American Bar, the Beaufort Bar, in-room dining, and the hotel’s scone shop, Scoff.
He will also work closely with Gordon Ramsay Restaurants, which operates the Savoy Grill, the River Restaurant, and Restaurant 1890.
Schell previously worked with the managing director of the Savoy, Franck Arnold, during their time at the Balmoral Hotel in Edinburgh.
The Swiss-born director joins from Moët Hennessy, where he rose from Channel Sales manager to head of London Trade Sales in the span of eight years. His experience also includes roles with the Rocco Forte brand.
The appointment follows the 2024 opening of Gallery and the launch of the Scoff takeaway concept.
In his new role, Schell will focus on developing new concepts and managing the hotel’s hospitality staff as part of the property’s ongoing evolution.
