Rockcliffe Hall appoints new head chef

Horsley joins Rockliffe Hall from Sofitel London St. James where he was executive sous chef

Luxury Durham hotel Rockliffe Hall has welcomed Martin Horsley as its new executive head chef. 

Horsley will oversee the hotel’s three restaurants: the 3AA Rosette Orangery Restaurant, The Clubhouse, and Nu Sana, a new casual eatery located above the site’s spa.

In addition, he will lead the three restaurant’s head chefs, giving direction and mentorship as they “craft their own innovative menus and progress in their careers”.

Horsley joins Rockliffe Hall from Sofitel London St. James where he was executive sous chef. With over 30 years’ restaurant experience, his career started in Scotland at Gleneagles in Perth. 

He also worked at a number of five-star hotels in Europe before spending a year at the one Michelin Star, 21 Queens Street, in Newcastle, under the guidance of Terry Leybourne. 

He previously worked in senior positions at hotels in Australia, including the Sheraton Mirage Port Douglas, the Sheraton in Perth, Le Meridian and Stamford Plaza, and was executive chef at Sofitel Mansion and Spa at Werribee Park.
