Harbour Hotel Southampton has appointed Matthew Tomkinson as executive head chef of its restaurant, The Jetty Ocean Village.
The move coincides with the appointment of Jorge Gertrudes as the hotel’s new general manager.
Tomkinson, a Roux Scholarship winner, previously held a Michelin star for eight years at the Montagu Arms in Beaulieu.
He has also held roles at The Goose in Oxfordshire and The Terrace in Yarmouth. In his new position, he will oversee the culinary direction of the waterfront site under the guidance of chef patron Alex Aitken.
The hotel, located at Ocean Village Marina, features 121 rooms and a spa. Gertrudes joins the five-star property with 30 years of experience in the luxury sector, including previous roles at Hotel du Vin, Lime Wood, and The Pig Hotels.
New menu items introduced following the appointments include roasted Cornish monkfish tail and honey-roasted duck breast.
The hotel stated that the recruitment of Tomkinson and Gertrudes represents a central investment in the property’s operational and culinary standards.
